Aunt Edna‘s take on this classic British dessert known as Bakewell Tart:
Ingredients
- 2 oz SR flour.
- ½ tsp Baking powder.
- 2 oz soft margarine.
- 2 oz fine sugar.
- One egg.
- 1 tbs lemon curd (can omit this and add 1 teaspoon of almond extract instead).
- 1 tbs warm water.
- Flaked almonds.
- Jam.
Instructions 1. Line a small (about 6 or 7 inch) fluted dish with pastry (I use a metal loose bottom one). 2. Put a layer of jam (any kind, but I usually use sugar free or reduced sugar jam) on the pastry. 3. Beat all of the ingredients together – and put on top of the jam. Sprinkle with flaked almonds. 4. Bake 350 F for 25-35 minutes.
The quantity here is for a small dish – it doesn’t seem a lot, but it will rise a little bit. However, should you wish to make a larger one, then double the ingredients.
