Last month there was an awful recipe printed in the Herald Tribune for Bubble & Squeak and a disgusting sounding sauce called WowWow sauce, which I have never heard of. Has anyone else?? Anyway I contacted the food editor and she featured my recipe which is more realistic! Of course we all have our own versions of this dish, but thought I would feature mine, so you can have it ready for Boxing Day...the traditional day for B&S! (Usually served with a relish like Piccalilli, which will be in the December issue of Union Jack).
Serves: 4
Ingredients
- 3-4 Tbsp dripping (or shortening).
- 2 large chopped onions.
- 1-2 lb cooked potatoes (I mix roasted and mashed).
- 1 lb cooked brussel sprouts or cabbage.
- 1/2 cup cooked peas or any other veggie left over salt and pepper.
Instructions 1. Melt the fat in a large frying pan, add onions and cook until softened. 2. Add all the remaining ingredients, mix well and fry about 5-20 minutes over medium heat pushing down with a spatula to make a crust on the bottom. 3. Then turn mixture over and continue cooking, may need to add a bit more fat.
