I was reviewing some of my recipes to feature and was reminded of this one which was a favourite in the tea room. Also, visiting a Canadian friend recently, she was reminiscing about these tarts, so thought I would make some of for her. It’s a very popular Canadian recipe and although the pastry is different, it works well. Hope you enjoy it, eh!
Yields: 2 Dozen
Ingredients
- 2 ½ cups all purpose flour.
- 2 Tbsp melted butter.
- ¼ tsp salt.
- 1 beaten egg.
- ¼ cup lard.
- ½ cup brown sugar.
- 1 egg yolk.
- ¼ cup corn syrup.
- ½ cup sour cream.
- ½ Tbsp white vinegar.
- 1 cup raisins.
- ½ tsp vanilla.
Instructions
- Place flour and salt in food processor, add lard and pulse to consistency of breadcrumbs.
- Add egg yolk and sour cream and knead in.
- Turn onto lightly floured board, roll out evenly and cut into rounds.
- Place in greased tart tin.
- Pour boiling water over the raisins to cover and let sit for a bit.
- Mix butter, egg, brown sugar, corn syrup, vinegar and vanilla. Drain raisins, and add to mixture, mix well.
- Fill pastry tarts 2/3 full, and bake in a 350° F oven for 15-20 minutes.
