This is a simple meal, similar to Cauliflower cheese and, since it’s summer, can be microwaved. It’s nice to serve this with meat or chicken.
Serves: 2
Ingredients
- 1 lb potatoes, peeled and thinly sliced.
- Salt and pepper.
- 1 small cauliflower, cut into flowerets.
- 1 garlic clove (peeled and crushed).
- 1 pinch grated nutmeg.
- ½ cup cream.
- 3 Tbsp. grated Cheddar cheese.
Instructions
- Cook potatoes in salted water for five minutes and drain well.
- Layer alternately, with the cauliflower in a greased ovenproof dish.
- Stir garlic and nutmeg into the cream, and pour over the vegetables.
- Sprinkle with cheese, cover and either bake in 350 oven for 40-50 minutes, or microwave 15-20 minutes on high, or until potatoes are cooked.
- Uncover and brown under grill.
