This is a great recipe for people who want a low fat but tasty meal:

Ingredients

  • Low-fat cooking spray.
  • 1 medium onion.
  • 2 tsp medium (or hot) curry powder (or to taste).
  • 225 g skinless chicken breast.
  • 2 Oxo Vegetable Cubes (½ to ¾ pints of water) .
  • 15 g sultanas.
  • 1 tablespoon tomato puree.
  • 1 medium apple.
  • 2 tablespoons 0% fat Greek yogurt (or any 0% fat free yogurt).
  • Pinch of salt.
  • Freshly ground pepper to taste.

Instructions:
1. Chop onion and apple into very small pieces.
2. Mist a large saucepan with low-fat cooking spray.  Sauté onions and apple for 4-5 minutes.  Stir in curry powder.
3. Add chicken (cut into cubes). Cook, stirring, for 2-3 minutes, until sealed all over.
4. Add stock, sultanas and tomato puree. Bring to the boil. Reduce heat, cover and simmer gently for about 40 minutes.
5. Just before serving, add the yogurt to the curry. Season. Cook for 2 minutes.
6. Serve curry with hot cooked rice. 
7. Garnish with coriander if desired.
