I featured an old favourite dish to pass at the Polo games Brit Club get-together on March 20th, and had a couple of requests for the recipe. So, although it isn’t really a British recipe, thought I would feature it.
Makes: 32 Bars.
Ingredients
- 1 Egg.
- 1/3 Cup Softened Butter.
- 1 Package Lemon Cake Mix.
- 2 Eggs.
- 1 Cup Sugar.
- 1/2 Tsb. Baking Powder.
- 1/4 Tsp. Salt.
- 2 Tsp. Grated Lemon Peel.
- 1/4 Cup Lemon Juice.
Instructions
- Heat oven to 350 degrees.
- Mix one egg, dry cake mix and butter until crumbly (I pulse in a processor).
- Reserve 1 cup and pat remainder in ungreased 9 x 13 pan.
- Bake 15 minutes or until golden brown.
- Combine the remaining 2 eggs, sugar, baking powder, salt, lemon peel, and lemon juice and beat until light and foamy.
- Pour over hot crust and sprinkle with reserved crumb mixture.
- Bake 15 minutes or until light brown.
- Sprinkle with confectioner’s sugar before serving.
- Cool and cut into bars.
