Potato dishes are so versatile and we certainly have a huge variety in British cooking. I al-ways liked the name of this dish, which is attributed to the north of England, and it is very easy to make.
Serves: 4
Ingredients
- 1 Tbsp butter.
- 1 medium onion.
- 1 Tbsp Vegetable Oil.
- 1 cup grated cheddar cheese.
- 1 lb potatoes ( Idaho are best).
- Salt and Pepper.
Instructions
- Peel and slice the potatoes and onions thinly.
- Heat the butter and oil in a heavy based frying pan.
- Remove from the heat.
- Place ingredients in layers, potato, onion and grated cheese, seasoning with salt and pepper between layers, and ending with a top layer of cheese.
- Cover, and cook gently over medium heat about 30 minutes, or until the potatoes and on-ions are almost cooked....not too soft.
- Uncover, and brown the dish under a grill/broiler, and serves straight from the pan.
