Potato dishes are so versatile and we certainly have a huge variety in British cooking. I al-ways liked the name of this dish, which is attributed to the north of England, and it is very easy to make.

Serves:  4

Ingredients


  • 1 Tbsp butter.
  • 1 medium onion.
  • 1 Tbsp Vegetable Oil.
  • 1 cup grated cheddar cheese.
  • 1 lb potatoes ( Idaho are best).
  • Salt and Pepper.

Instructions

  1. Peel and slice the potatoes and onions thinly.
  2. Heat the butter and oil in a heavy based frying pan.
  3. Remove from the heat.
  4. Place ingredients in layers, potato, onion and grated cheese, seasoning with salt and pepper between layers, and ending with a top layer of cheese.
  5. Cover, and cook gently over medium heat about 30 minutes, or until the potatoes and on-ions are almost cooked....not too soft.
  6. Uncover, and brown the dish under a grill/broiler, and serves straight from the pan.
