Even after living in Florida for so many years, I still have difficulty relating fresh produce being available at opposite times. Right now, strawberries are really delicious and easily found. The nicest are from Plant City, but also there are several sources in Sarasota County.

I thought a nice easy dessert using strawberries, would make a lovely Valentine treat. The word fool in this British recipe refers to a trifle or of little consequence, and goes back to the middle ages. However ‘trifling’ it may seem, it is a lovely dessert for your sweetheart.

Serves: 4-6.

Ingredients

  • 1 lb fresh strawberries, washed, dried and picked over any spoiled bits.
  • 1 ¼ cup heavy whipping cream.
  • ¼ cup sugar.
  • 1 tsp vanilla (can also substitute rose water for a nice change).

Instructions

  1. Be sure the strawberries are clean and dried, and all spoiled parts cut off. 
  2. Place in a blender and puree. (If needed at this point can strain to remove any seeds).
  3. Whip the cream until almost stiff, and beat in sugar and vanilla, then fold into the pureed strawberries. 
  4. Chill at least four hours before serving.
