This is an old favourite. However, you really do need to use Lyles Golden Syrup which can be purchased locally at the Brit purveyors. Yummy served with custard sauce.

Ingredients

  • Short crust pastry.
  • 2 cups finely ground fresh breadcrumbs.
  • 1 ½ cups golden syrup.
  • Finely grated rind and juice of 1 lemon.
  • 2 egg yolks.
  • 1 beaten egg.
Instructions
  1. Line a lightly greased pan with the pastry.
  2. Mix syrup, egg yolks, breadcrumbs, lemon rind and juice.
  3. Gently heat in a small saucepan.
  4. Pour into prepared pastry shell and, if desired, top with strips of pastry for decoration.
  5. Bake in a 375 degree F oven about 40-50 minutes.
