This is an old favourite. However, you really do need to use Lyles Golden Syrup which can be purchased locally at the Brit purveyors. Yummy served with custard sauce.
Ingredients
- Short crust pastry.
- 2 cups finely ground fresh breadcrumbs.
- 1 ½ cups golden syrup.
- Finely grated rind and juice of 1 lemon.
- 2 egg yolks.
- 1 beaten egg.
Instructions
- Line a lightly greased pan with the pastry.
- Mix syrup, egg yolks, breadcrumbs, lemon rind and juice.
- Gently heat in a small saucepan.
- Pour into prepared pastry shell and, if desired, top with strips of pastry for decoration.
- Bake in a 375 degree F oven about 40-50 minutes.
