Title: Lemon Bars
Description: I featured an old favourite dish to pass at the Polo games Brit Club get-together on March 20th, and had a couple of requests for the recipe. So, although it isn’t really a British recipe, thought I would feature it.
Serves: 32 Bars
Ingredients:
1 Egg. 1/3 Cup Softened Butter. 1 Package Lemon Cake Mix. 2 Eggs. 1 Cup Sugar. 1/2 Tsb. Baking Powder. 1/4 Tsp. Salt. 2 Tsp. Grated Lemon Peel. 1/4 Cup Lemon Juice.

Instructions:
Heat oven to 350 degrees. Mix one egg, dry cake mix and butter until crumbly (I pulse in a processor). Reserve 1 cup and pat remainder in ungreased 9 x 13 pan. Bake 15 minutes or until golden brown. Combine the remaining 2 eggs, sugar, baking powder, salt, lemon peel, and lemon juice and beat until light and foamy. Pour over hot crust and sprinkle with reserved crumb mixture. Bake 15 minutes or until light brown. Sprinkle with confectioner’s sugar before serving. Cool and cut into bars.
