Title: Pan Haggerty
Description: Potato dishes are so versatile and we certainly have a huge variety in British cooking. I al-ways liked the name of this dish, which is attributed to the north of England, and it is very easy to make.
Serves: 4
Ingredients:
1 Tbsp butter. 1 medium onion. 1 Tbsp Vegetable Oil. 1 cup grated cheddar cheese. 1 lb potatoes (Idaho are best). Salt and Pepper.

Instructions:
Peel and slice the potatoes and onions thinly. Heat the butter and oil in a heavy based frying pan. Remove from the heat. Place ingredients in layers, potato, onion and grated cheese, seasoning with salt and pepper between layers, and ending with a top layer of cheese. Cover, and cook gently over medium heat about 30 minutes, or until the potatoes and on-ions are almost cooked….not too soft. Uncover, and brown the dish under a grill/broiler, and serves straight from the pan.
